Once Upon A Dinner Party: Chickpea Burgers

Let me start by saying that I am not a vegetarian.  I have a lot of friends that refrain from meat and although I usually eat meatless more days then not I enjoy a steak or juicy burger as much as the next girl.



Meat is a great source of protein, vitamins and minerals and when eaten in moderation can be part of Everyday Nutrition.  On the other hand, there are many non-meat forms of protein that are easy to add into the dinner rotation and keep things exciting.

My favorite go-to vegetarian recipe is a chickpea burger, it is so good, I swear that you won't miss the meat and it couldn't be easier to make!

Chickpea Burgers:

1- 12oz can of chickpeas (rinsed)
1/2 chopped onion
1 glove of garlic chopped
1 egg white

+ any other spices you would want.  Italian style? Add basil and oregano.  Indian infused?  Add curry and garam masala.  Like spicy? Add some cayenne pepper.

Put everything into the food processor, or mash by hand with a potato masher and form into patties, done!

Next, time to cook.

Start with a hot pan with a little olive oil or cooking spray, add the "burger" and flatten and cook a few minutes on each side until golden brown.


Just like any other burger, you need a bun and toppings.   I went with a homemade whole wheat bun, american cheese, sliced tomatoes and avocado


Put it all together, pair with some fruit and veggie sides and you have a delicious meal!



Want to know the best part?  Make a large batch of "burgers" and freeze the extras uncooked. 


When you want a quick meal pull one out of the freezer, follow the steps above and you have a healthy dinner in under 10 minutes!
