What Does a Dietitian Eat?


Do you want to know the easiest thing in the world to cook?  Couscous.  I swear it practically cooks itself.  It's kind of like rice, kind of like pasta... Paired with some steamed vegetables and lean protein it makes a quick and easy dinner.


Breakfast: 1 cup shredded wheat with 1/2 cup soymilk and 1/2 cup blueberries

Lunch: 1 Whole wheat pita, carrot sticks, 4 tablespoons hummus and 1 cup lentil soup

Dinner: 1 cup cooked couscous, 1 cup garlic spinach and 3 ounces grilled tilapia.



Seriously this was a 10 minute meal.

Step 1: Bring 1 cup of chicken stock to a boil, add 1/2 cup couscous, remove from heat, cover and let sit for 10 minutes

Step 2: Saute spinach and garlic with a little butter and season to taste

Step 3: Season tilapia, I used lemon pepper Mrs. Dash, and grill 3-4 minutes on each side

By the time the spinach and tilapia are done so is the couscous!

  1. This looks awesome! We love fish as a "fast food" - and spinach. Sometimes fast can mean amazing. This is a great example of that.
