Sunday Funday: Cookies on a Stick Part 2



Did you try making cookies on a stick?  Or maybe just wondering how they turned out?  Let's get started!

Start with cooled cookies on a wire baking rack:


Next whip up a batch of royal icing.  My new favorite is by Wilton:

Ingredients:

3 tablespoons Meringue Powder
4 cups (about 1 lb.) confectioners' sugar
6 tablespoons warm water
Makes:
About 3 cups of icing.

Instructions:
Beat all ingredients until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer).


Put into a piping bag or a ziplock bag with the corner snipped and outline each cookie


Next add water, 1 tsp at a time, to the royal icing until it becomes the consistency of shower gel and pour slowly to fill each cookie 


The icing goes on shiny and then dries to a hard matte finish.


Let the cookies sit for about an hour, whip up some royal icing in another color and decorate!  At this point I usually let them sit in the fridge overnight to harden.


Once the cookies sit in the fridge overnight they are hard enough to wrap up and give away... or eat!
