A good friend of mine follows a Gluten Free diet after being diagnosed with gluten intolerance a year or so ago. I enjoy trying to recipes when she comes over that will appeal to both her as well as my other non-gluten avoiding friends.
Have you ever tried spaghetti squash? It is fabulous! Simple cut it in half. Bake rind side up about 30 to 40 minutes at 375 F.
Once it is done simply run a fork up and down and spaghetti-like strands form instantly! It's like magic. Delicious, gluten-free, noodle-esque magic!
Top with your favorite sauce
You could even serve it in the hallowed out shell

So I'm bringing a meal to a friend who is both Gluten- and Dairy-Free... talk about tricky. It's all fine in theory, but trying to plan an entire meal that excludes gluten-containing items and things as simple as butter is rather tricky. I like the idea of spaghetti squash, but I already planned my menu around polenta :) yum.
