Cranberry Pumpkin Muffins
- 2 cups whole wheat flour
- 1/2 cup packed brown sugar
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tablespoon cinnamon
- 1 cup pumpkin puree
- 1/2 cup egg beaters
- 1/2 cup melted margarine
- 1/4 cup flax seed
- 2 tsp vanilla
- 1 cup fresh cranberries mixed with 1/4 cup sugar
1.) Preheat oven to 400 degrees
2.) Mix dry ingredients in a large bowl
3.) Mix wet ingredients until well combined in a separate bowl
4.) Add wet to dry ingredients and stir only until mixed (over mixing may cause tough muffins)
5.) Spoon batter in muffin cups until 3/4 full
6.) Bake 20-25 minutes
