Breakfast Foods Squared

A breakfast food that is used to make another breakfast food?  

All of the nutrition of your favorite healthy breakfast cereal without the hassle of preparing a bowl with milk?

Sounds crazy right?  Get ready, today we are making cereal muffins!

 






Cereal with milk is a healthy, delicious and nutritious breakfast but sometimes there just isn't time.  What to do?  Use your favorite cereal to replace some of the flour in a basic muffin recipe!

You can use whatever cereal you have on hand as long as it's healthy.  I have made this recipe with raisin bran in the past but today I used Banana Nut Cheerios Medley Crunch.


Why?  Well frankly because I didn't like it as a cereal but couldn't bring myself to throw it away.

Ready? Let's go!

Ingredients:


2 cups cereal
1 cup milk
1 egg
1/4 cup oil
1 1/4 cup flour
1/2 cup sugar
1 1/4 tsp baking soda
1/2 tsp salt

Directions:

Preheat oven to 375

Soak cereal in milk, oil and egg for 5 minutes.

Stir in flour, baking soda, salt and sugar.

Pour into muffin cups

Add 1/2 cup of cereal and 2 tablespoons brown sugar to a food processor.  Sprinkle on muffins

Bake 20 minutes or until done.

This recipe makes 12 regular size muffins
