Recipes- Chocolate Coconut Rum Cupcakes with Coconut Rum Frosting


Great American Bake Sale Recipe #2: Chocolate Coconut Rum Cupcakes with Coconut Rum Frosting


2 cups sifted flour
1 tsp soda
1/2 tsp salt
1 cup sugar
2 tablespoons honey
1 stick butter
1 egg
1 cup buttermilk
1 tsp rum extract
1/2 cup sugar-free coconut Torani syrup

Mix all liquids together until light and fluffy.  Sift the soda and salt into the flour and then mix everything together.

Bake at 375 for 18-minutes or until an inserted toothpick comes out clean.




Frosting:

4 ounces cream cheese
1/2 stick of butter
4 cups powdered sugar
1 tsp rum extract
1 tablespoon sugar-free torani coconut syrup

Cream together all ingredients until light and fluffy.


Take 1/4 of the frosting and put in a separate bowl.  Add 1/2 cup flaked coconut and stir to combine.


Using an apple corer take the centers out of the cupcakes


Using a ziplock bag with the corner snipped fill each cupcake with the frosting and coconut mixture


Frost the tops of each cupcake with the coconut rum flavored frosting.  They don't have to look pretty because the next step is to cover them in coconut!
