Happy Memorial Day!

Memorial Day was originally known as Decoration Day. It was established in 1868 to commemorate the soldiers killed during the Civil War. Over the years it has evolved to a day to remember all U.S. men and women killed or missing in action from all wars.

ActforAmerica.org said it best:

Let my grateful tears thank you for the nights you slept freezing in a tent or sweating in the desert, for the lonely days you spent missing your loved ones, for the hours you spent sick in pain and without someone holding your hand, for the moments of sheer fright in the heart of battle, for the wounds you have suffered fighting evil, for the endless days in hospitals undergoing painful surgeries, for the precious occasions you have missed back at home. For all of these sacrifices I thank you on behalf of millions of Americans who are so grateful for you. We truly appreciate these sacrifices.

A special thank-you is in order to your families, to the parents who raised you and made you be the man or woman you are today. I thank your wives, husbands, and your loved ones who stand by you and support you with their love and dedication.

And for those who returned in eternal sleep, may your legacy be honored for generations to come, may the tears shed over your coffins fertilize the fields of patriotism in our nation to raise a new generation built on strength and honor, able and willing to follow in your footsteps when duty calls to defend America. May your blood not have been shed in vain. May we prove worthy of your sacrifice. May we always honor your parents so they will always know that they are the parents of an American hero.

You are our brave ones, our heroes, and our national treasures. You are the pride of our nation, our strength and our foundation. Thanks to you, millions have been freed around the world. Thanks to you, those who criticize our country, burn our precious flag, and speak ill of you, are able to do so because their freedom is built upon your blood and your sacrifice.

I salute you one and all. I bow before you in respect and humility. May God bless you and bless America, land of the free and home of the brave, and the dream that became my address.

My name is Kristin and I am a Registered Dietitian living in the heart of Chicago.

Everyday Nutrition is a blog set out to show how nutrition can be easy, fun, creative and most importantly part of everyday. Some posts will be nutrition and health focused where as others may be more indulgent to show that in moderation any food can be part of a healthy lifestyle.

I have worked in a variety of settings including home health care, women, infant and children's nutrition, diabetic wellness, rehabilitation as well as community health promotion.

I feel that nutrition is one of the most important components of a healthy lifestyle, but in addition to nourishing our bodies food has to make us happy, fit our budget and must be adaptable to daily changes we may face.

I like to think of myself as a realistic Dietitian and strongly believe in the following:

1.) There are no "bad" foods. Eat in moderation and don't deny yourself. Eat healthy 80% of the time and splurge the other 20%, not only will it help you stick to a healthy eating plan but you deserve it!

2.) The more visually stimulating your meals are the more you will enjoy them. A low-fat item will taste better if it looks appealing so add some creativity into your meals and save calories while eating healthy.

3.) Save money where you can so that you can afford healthy foods or match sales with coupons to pay less for those foods. I hear patients say all the time that healthy foods are expensive but it is possible to make healthy foods part of any budget.

4.) Eating is a numbers game, keep your "calories in" and "calories out" the same and you set yourself up for weight stability over time. Know that you will be eating a larger dinner? Make sure to hit the gym in the morning or scale down breakfast and lunch portions to compensate.

5.) Nutrition does not have to be difficult! Eat a balance of foods, avoid high calorie high sugar items and make sure to have a large glass of water at each meal, it can be that simple. I often tell patients to eat as their mother taught them growing up, going back to basics helps ground us in good health.
