What Does a Dietitian Eat?

So two weeks ago was my mom's birthday and as a surprise my brother and I showed up two days early to celebrate with her!  We flew out to LA on Thursday night and then took the first flight to Honolulu in the morning so that we made it to the hotel in time for happy hour.  It was a long day but well worth it to see how excited she was to see us.





I started the day with breakfast on the plane.  Apparently some airlines still serve breakfast!

Inside was a spinach and cheese fritata and a blueberry muffin!  I would like to say that I saved the muffin for later but I was really hungry since 10am LA time was really like noon Chicago time so I ate it all...


Following breakfast we decided not to waste any time starting our vacation and ordered a cocktail.  One of my favorite things to drink in Hawaii is guava juice so I figured why not add it to vodka and it was delicious!


The other advantage of having a drink is that it helped me sleep for a few hours.  6 hours is a long time to sit in one place so a few hours of napping made the time go by quicker.  When I woke up I had a cup of coffee and a glass of water.  Dehydration-wise they kind of canceled each other out but I needed a little caffeine.


We finally made it to Honolulu for the big surprise and I think that it is safe to say that our mom had no idea.  We decided that we would call to wish her a happy birthday "from chicago" and in our conversation we casually asked what she was doing to which she responded that she was at the pool.  Little did she realise that we were actually only a few miles away and would now know exactly how to find her! 

After the initial suprise we had a few hours of pool time and then a everyone went to their rooms to get ready for dinner.  My brother and I checked into our room and got ready before everyone else so we headed down to a restaurant in the hotel for a drink and split shrimp cocktail, yum!

Off to dinner we went.  My grandpa made a reservation at the Halekulani, a beautiful oceanfront restaurant with a live hula show at sunset.

We started with a celebratory bottle of champagne


For dinner I ordered pan seared grouper with shrimp, mussels, spinach and coconut curry.


And then came dessert!  How beautiful is that?  My mom was served the cutest little coconut cake with fresh raspberries and a vanilla cream sauce.


But they didn't stop there!  My grandpa and I also had February birthdays so they surprised us with treat as well.



It was a lovely day with delicious food and drink to celebrate my wonderful mother's birthday!
