Once Upon a Dinner Party: Gluten Free

Once upon a time there was a Dietitian named Kristin who longed to have a dinner party for several friends, all of whom happen to have different dietary restrictions.  What a fun challenge she thought and set off to create dishes that would appeal to each friend. 

Once Upon a Dinner Party: Gluten Free

GLUTEN FREE PEANUT BUTTER COOKIES:

2 cups peanut butter
1 cup masa (corn meal)
4 eggs
2 cups sugar

Mix all together to form a dough.  This recipe makes about 36 cookies. 



I recommend a cookie scoop to make sure that portion size is maintained for all cookies:






The scoop is also helpful so that you can scoop all of the dough at once.  Portioning ahead allows you the option to freeze some cookie dough balls to be used for easy anytime cookies at a later date.



When you are ready to bake the cookies put onto a cookie sheet, press with a fork for official peanut butter cookie marks and bake in a 350 degree over for 8 minute rotating half way through to ensure proper cooking.






Take out of the oven, let cool on the pan for 1-2 minutes and then let finish cooling on a wire rack to prevent the bottom of the cookie from over browning.
