Recipes: Friday Fish Fry

Friday Fish "Fry"!

Oh how I love a good fish fry.

Deliciously fried golden fish fillets often served bottomless at local pubs with fries and coleslaw makes for a totally awesome and indulgent evening.

Not up for all of the calories and fat that come with it?  Try this!

Start with fish.  I like cod or tilapia.

To make the batter I mix equal parts low-fat bisquick and beer.

Yes, you heard right, beer, it wouldn't be a fish fry without beer.

Plus I get thirsty while cooking... so what doesn't go into the batter goes into my mouth, no waste there.

I set up an assembly line of fish, flour and batter.

Next I dip the fillets in the flour and shake off the excess.

Next the fish gets dipped in batter and placed on a pan.

To go with it I make simple fries, or "Chips" as the English call it.

Start with a potato and cut into wedges.

Mist with olive oil and sprinkle with sea salt.

Preheat the oven to 375 and bake the potatoes for 20 minutes.

Increase the oven temperature to 450, add the fish and bake both items for an additional 10 minutes.

Serve with a side of veggies and enjoy!
